Product Information—Coffee

How should I store my coffee? Should I put it in the fridge?

We recommend storing coffee in a cool, dry place. We also recommend only buying enough coffee for 1-2 weeks of brewing at a time for best results. We don’t recommend refrigerating or freezing coffee, as beans and grounds tend to absorb surrounding moisture or odors.

What is the expiration date/shelf life of your coffee?

We haven’t come across a scenario where coffee is so old that it can be harmful to your health, and so the “shelf life” of coffee from a food safety standpoint is technically a really, really long time. That being said, we think coffee is best enjoyed fresh, within a couple weeks of the roast date, to experience the full flavor potential.

What do you mean by "tasting notes"?

Much like wine, specialty coffee has a broad spectrum of natural flavor. The varietal of the coffee seed, the altitude, the growing conditions, the processing method, and the roast profile can affect the flavor of a coffee without adding any extra ingredients. The flavor profile is categorized into tasting notes. For example some coffees might taste brighter and more floral while others might be more chocolatey and nutty. Fun fact: there is actually a certified and licensed tasting "degree" within coffee (like a wine sommelier). The professional coffee taster is called a Q-grader. We actually have a Q Grader on staff here, his name is Sam Mirto. Sam is part of our team that determines the tasting notes you see on the coffee label.

How do I brew coffee?

We like to brew coffee around a 1:14-1:16 coffee to water ratio. That is 1 part coffee (example 29g for a single cup pour-over) to 14 parts water (407g). If you don't have a gram scale, its roughly 1 oz. of coffee to 14 oz. of water. There are a ton of ways to actually brew coffee but we think that a fresh grind and good ratio can make for a good cup whether you are using a drip method or a pour-over. Check out our brewing series or sign up for a brewing class at The Foundry at Ferris for more info on specific brewing methods.

What are your sourcing practices? Do you do Fair Trade?

Our sourcing practices are centered around direct relationships with producers. As much as possible, we seek to source coffee and make annual purchasing decisions at the origin in which coffee is grown. This means that we’re traveling to coffee-growing countries, having conversations with producers, establishing prices, and making purchasing decisions on site. Because we utilize a more direct sourcing model, we do not focus on the Fair Trade certification, as we know that the prices we’re paying to producers are more than their production costs. We do have a small amount of Fair Trade certified coffees, but we do not actively seek coffees with this certification given our direct sourcing model.

When we travel to an origin, meet with a producer, establish a relationship, and pay based on production costs, we call those coffees “Relationship Coffees”.  Our goals is to fill our lineup with coffees sourced in this manner. To learn more about Relationship Coffees, check out our origin series. If this purchasing model is important to you, look for our coffees that have the Relationship Coffee badge.

Is your coffee Kosher?

Yes, our coffee and nut products are manufactured under the supervision of Kashruth Division of Chabad House of Western Michigan and are either Kosher & Parve or Kosher & Dairy depending on the product.

I cannot find a certain coffee that I'm looking for online. Where did it go?

We generally source enough coffee to get us through an entire “crop” season, or until the coffee is harvested again and arrives in warehouses in the US. Coffee is harvested annually in most cases, and so we strive to travel to each growing country that we source coffee from. We only source a limited amount of certain coffees for a number of reasons—the coffee could be from a micro lot, there could be a limited supply, its flavor profile may be time sensitive, etc. If you're not seeing what you're looking for, contact us for a recommendation! Our team will help you find a coffee you will love!

How should I grind my coffee?

The best way to grind your coffee is with a non-blade grinder. If you don't have one of those, no sweat, ask your barista at Ferris to grind it for you. The basic rule of thumb for grind size is that with longer "water-contact-time" (the time coffee touches the brewing water), the more coarse (large) the grind size. The list below shows the basic grind size adjustment you would do to account for a different brewing method that has water touching coffee for variable times. Espresso is usually made in 25 seconds, so a very fine grind is necessary, as opposed to making cold brew where it has an 18 hour steeping time with the coarsest setting.

  • Espresso: Fine grind
  • Drip: Medium coarse grind
  • French Press: Coarse grind
  • Cold Brew Toddy: Coarsest

Product Information—Nuts & More

How should I store my nuts, dried fruits & trail mixes? Should I put them in the fridge?

Heat, exposure to oxygen, moisture and added oils will quicken the rate of rancidity for nuts and seeds. If you keep your nuts in an airtight container in cool, dry conditions (this can be a cool, dry, cupboard or your refrigerator*) it will extend the shelf life. However, like most plant-grown foods, the fresher, the better! These conditions are appropriate for dried fruits and trail mixes also. We highly recommend storing walnuts in cold conditions as they have a naturally high oil content.

*Note: Container must be airtight if storing product in fridge or freezer. Nuts will absorb unwanted moisture or odors if exposed.

How should I store my chocolate products?

Store your chocolate away from light in cool and dry conditions in an airtight container. We do not recommend refrigeration unless it is too hot for indoor storage. In this case, make sure it is wrapped well to avoid absorbing moisture and odors. We recommend eating chocolate at room temperature for best flavor.

Are your products kosher?

Yes, our coffee and nut products are manufactured under the supervision of Kashruth Division of Chabad House of Western Michigan and are either Kosher & Parve or Kosher & Dairy depending on the product.

Do dried fruits contain sulfites?

Sulfites are a naturally occurring reaction in certain foods and a common added ingredient in others to preserve the color of dried fruit. There are no health risks connected to sulfite consumption. However, a small percentage of people do have a sensitivity to sulfites and this can cause an allergy-like reaction. This reaction is quite rare, and more common in those with asthma. With that in mind, some Ferris dried fruits contain sulfites and others do not. Our cherries, cranberries, blueberries, dates, prunes and seedless raisins are all sulfite-free (golden raisins do contain sulfites, jumbo seedless raisins do not). If you do have a sensitivity to sulfites and are looking for a sulfite-free snack, we recommend the following Ferris products: Cherries Berries & Nuts, Cherry Berry Mix, Country Mix, Super Mix, Diet Watchers Mix, Blueberries Cranberries & Nuts

What is the expiration date/shelf life of my Ferris product that I purchased?

There is a ‘best by date’ printed on every individual package. This date refers to when an item is at its optimum freshness. However, there are other conditions that will affect the life of the product. You can keep product fresher or even extend the shelf life if it is airtight and kept cool. If the product is stored in warm conditions or not sealed properly, it will lose its freshness much faster.

  • Roasted Nuts & Seeds: 6 months
  • Raw Nuts & Seeds: 9 months
  • Dried Fruit: 12 months

Are your products vegan?

All nuts and seeds support a vegan diet. Check out some great recipes in our blog for some great ways to cook with nuts. Some raw nuts can even be used as a great dairy alternative. Check out our nut milk recipe here!

*Please note that not all our products are vegan—look for the vegan badge on our products to confirm vegan friendly options! You can also browse our nut and mixes selection with a dietary preference filter.

Are Ferris nuts genetically modified (GMO)?

According to the raw nut & seed industry, it is unlikely that any of the raw nuts and seeds that we process here at Ferris Coffee & Nut Co. contain genetically modified organisms. Currently, we are not claiming any of our products to be GMO free. However, all products labeled USDA organic must be non-GMO to be approved for the certification.

Why do you roast your nuts in peanut oil?

We choose refined peanut oil for a number of reasons. Our peanut oil is refined and contains no allergen. The refinement process strips the protein from the oil and it is guaranteed allergen free. Peanut oil has a relatively high smoke point (in comparison to other vegetable oils) and therefore is less carcinogenic. It is delicious, versatile and doesn't absorb the flavors of the food that is cooked in it. We can pump, recycle, clean and reuse this oil for efficiency and sustainability.

What precautions do you take working with allergens?

Our facility handles peanuts, tree nuts, wheat, soy, milk and egg. Sanitation procedures are in place to address the prevention of allergen-to-allergen cross contact and allergen to non-allergen cross contact. Verification procedures are in place which involves allergen testing after each clean. Product scheduling is done in a manner so that products containing same allergens are running in order to minimize changeovers and ultimately reducing the chance of allergen cross contact.
