Peanut Butter Banana Muffins
Low sugar, high protein Peanut Butter Banana Muffins. Made with Ferris all-natural peanut butter that gives them a rich and nutty flavor that pairs perfectly with the sweet and ripe bananas.
2 Ripe Bananas
¼ Cup Pure Maple Syrup
½ Cup Whole Milk Greek Yogurt
1 Large Egg
½ Cup Whole Milk
½ Cup Ferris All-Natural Peanut Butter
2 Tablespoons Vanilla Extract
2 Tablespoons Brown Sugar
1 ¾ Cups Whole Wheat Flour
1 Teaspoon Ground Cinnamon
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
¼ Teaspoon salt
¼ Cup Dark Chocolate Chips (optional, but encouraged!)
Preheat Oven to 350°F. Line a muffin tin or spray with non-stick spray (standard size).
In a medium sized bowl, mash Bananas
Add in maple syrup, yogurt, egg, milk, peanut butter and vanilla. Mix together until smooth.
In a bowl, whisk together the flour, brown sugar, cinnamon, baking soda, baking powder, salt. Pour in wet ingredients. Stir until combined. Fold in chocolate Chips
portion out the batter into the muffin tin. Bake at 350°F for 15-17 minutes. Check with a toothpick to ensure muffins are cooked through
