Ingredients (Serves 2–3)

For the Salad

  • 5–6 cups mixed greens (spring mix, romaine, or spinach)

  • 1 cup Ferris Walnuts (roughly chopped)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1 bell pepper, diced

  • 1 avocado, sliced (optional but highly recommended)

  • ¼ cup red onion, thinly sliced

  • Fresh herbs (mint, parsley, or basil), optional for extra brightness

For the Tahini Dressing

  • 3 tbsp tahini

  • 2 tbsp lemon juice

  • 1 tbsp olive oil

  • 1–2 tbsp water (to thin as needed)

  • 1 tsp maple syrup or honey

  • 1 small garlic clove, grated or minced

  • Salt & pepper, to taste


Instructions

  1. Prep the veggies.
    Wash, chop, slice — the whole colorful crew. Add the greens to a large bowl and layer the veggies on top.

  2. Toast the walnuts (optional, but wow).
    Warm a dry skillet over medium heat and toast the walnuts for 2–3 minutes until just fragrant. This step isn’t required, but the nutty aroma is chef’s kiss.

  3. Make the tahini dressing.
    In a small bowl, whisk together tahini, lemon juice, olive oil, maple syrup/honey, garlic, and a pinch of salt and pepper. Add water a little at a time until you reach your perfect pourable consistency.

  4. Assemble the salad.
    Add the walnuts to the bowl, drizzle generously with tahini dressing, and toss until everything is lightly coated. (Or keep the dressing on the side if you're meal prepping.)
