STORY
The idea behind the Decaf Colombia is truly rooted in the love for a good decaf. They get a bad rep, but they shouldn't. Our goal was to highlight the spectrum of colors and accompanying flavor profiles found across our many coffee-producing farms in Colombia. We view this blend as the reward, at the end of many, many long days of work; a "tesoro" or treasure of a coffee that shines in cup quality and is supported by a strong and pleasing sensorial profile.
It can be said that these coffees come from Castillo, Caturra, and Colombia trees planted between 1,200 and 2,000 m.a.s.l. All of them had the same traditional process where the best cherry was picked and de-pulped, fermented in tanks for 12 - 24 hours. Then, the coffees were dried in a two-stage process, where firstly the beans were put out on raised beds during an average period of 10 to 15 days to later finish reducing the moisture on a mechanical dryer for 36 to 38 hours.
